DESCRIPTION
Feta PDO is the most representative cheese of the millennia-old Greek dairy tradition. Made for centuries from sheep’s milk and often blended with up to 30 percent goat’s milk. The term comes from the Greek word “fetas,” meaning “thinly cut piece,” and refers to the procedure by which the curd is cut into pieces. With an unmistakable white color and no rind, it has been a PDO since 2002. Another typical characteristic is the semi-hard but crumbly texture and the strong, intense flavor that many people like to enjoy on its own, in the famous Greek salad, or in other preparations.
In this case, we offer a variant seasoned in oak barrels. Feta PDO is like wine, the older it gets, the better it tastes, especially in casks.
