An English cheese made following a process very similar to that of Cheddar–just a little more crumbly and characterized by the deep orange color resulting from the addition of the vegetable dye annatto into the curd. With a pleasantly mellow flavor, it is an excellent accompaniment to hamburger prepared with a little onion and ketchup.
