To control the effects of the development of undesirable fermentations resulting from the possible presence of Clostridium tyrobutyricum spores in milk, lysozyme, a protein naturally present in high amounts in women’s milk and tears, extracted from hen’s egg white, is added to the milk before rennet.

Bertoni SRL, founded in 1880, is located in Luzzara, a town in the province of Reggio Emilia on the border with Lombardy. Here we season, process and market Parmigiano Reggiano. In the nearby village of Codisotto, however, our Parmigiano Reggiano is made according to tradition at the Cantelma cheese factory.
