Bresaola I.G.P. is a cured meat made from the meat obtained from the thigh of a bovine animal. The specifications call for the use of various cuts such as rump or the more famous punta d’anca; the production area is Valtellina, or rather the valley of the same name that is home to the city of Sondrio. The texture of the cured meat is soft due to the low degree of saltiness, and the flavor is pleasant and not overly savory. It is usually cut very thinly and is often accompanied with arugula, Parmesan cheese and a drizzle of e.v.o. oil.
